Draper Valley Chicken – We only use chicken from Draper Valley, this ensures that our product is always fresh, never frozen, and raised humanely in Oregon and Washington. Their chicken is 100% antibiotic, preservative and hormone free, so all you can taste is a high quality bird.
Since Draper Valley chickens are only grown in the Northwest, it ensures the freshest product possible and shortest times from farm to table.
Draper Valley chickens have an old fashioned chicken flavor because they are fed a 100% vegetarian diet of corn and soybean flakes and are never fed any animal fat or animal byproducts. Draper Valley chickens are never given antibiotics anytime during their life. They are able to achieve this by focusing on good husbandry practices, giving the chickens a stress-free environment by increasing growing space per bird and letting them range in open air barns with access to fresh, clean water and feed.
Carlton Farms Pork - Carlton Farms is located in the foothills of Oregon's coast range, a few miles outside of Carlton. They provide high quality meat that is antibiotic-free, grown by a handpicked team of farmers who respect their animals and the environment. The Carlton farmers practice sustainable farming, and always follow strict standards for quality. The growers use a strictly grain-based vegetarian diet for their animals, and other than the natural nursing process in which newborn piglets engage, no animal byproducts are fed to hogs purchased by Carlton Farms.
Carlton Farms sources from a select group of farms and ranches in the Pacific Northwest that the company has certified. The company’s quality standards mandate that every hog that is processed is antibiotic-free when it arrives from the growers' farms. Carlton Farms constantly tests and inspects the hogs they buy to ensure that these standards are followed. They even brought in Dr. Temple Grandin, one of the nation's leading experts on humane animal handling practices, to design a leading-edge harvesting system and training program for their employees.

Those who know food know that good cooking always starts with the best ingredients. That’s why we feel our purveyors deserve the spotlight—all local food lovers like ourselves, they do their jobs quite well. Some of the best parts of our menu shine because of them, and for that, we’re utterly grateful.
